A tasty and healthy pancake recipe by nutritionist Madeleine Shaw.You can find more healthy recipes by Madeleine Shaw in her latest book Ready, Steady, Glow.Ingredients160g of rice flour or buckwheat flour75g of ground almonds1/2 teaspoon baking soda1 teaspoon cinnamon1/2 teaspoon salt3 tablespoon coconut sugar2 eggs3 tbsp of melted coconut oil plus extra for cooking1 cup milk (almond, rice, coconut…whatever you want)to serve – maple syrup, fresh fruit and almond flakes.DirectionsIn a large bowl mix the flour, ground almonds, baking powder, soda, cinnamon, salt and coconut sugar. Add the eggs, oil and milk and mix well.Heat a frying pan to a medium-high temperature and melt the coconut oil.
