Immune Boosting Chicken Broth


It’s cold and flu season and we're all trying to keep a friendly but firm 2-metre radius from colleagues with colds. Something else worth trying is healthy eating. 

This Immune Boosting Chicken Broth recipe, from nutritionist Madeleine Shaw, is packed with protein from the chicken which also contains B6 that protects the immune system. A quick and easy winter dish which is great for preventing and recovering from colds. The ginger also acts as a good immune booster as well as adding a wonderful flavour.

Ingredients 

 500ml of chicken stock, fresh

2 chicken breasts, cubed

1 red chilli, finely chopped

1 tbsp of ginger, grated

2 bok choi

200g of baby corn

Directions

Place the stock in a pot, add the chilli, ginger and bring to a simmer, add the chicken and cook for 5 minutes then add the bok choi and baby corn and cook for another 5 minutes, remove the chicken and shred then place back in and serve warm.
