Sweet Potato, Fennel and Chilli Stew Posted on 20 January 2016 by Admin in Wellbeing Nutritionist Madeleine Shaw's delicious Sweet Potato, Fennel and Chilli Stew is a super comforting and bloat-busting veggie dish.Serves: 2Preparation Time: 10 minutesCook Time: 50 minutesTotal Time: 60 minutesIngredients250g of sweet potato1 fennel1 red chilli100g of kale500ml of vegetable stock1 white onion2 crushed garlic cloves1 tsp of dried thyme1 tbsp of coconut oil or avocado oilDirectionsCut the sweet potato into small chunks and the fennel into slithers.Finely chop up the onion and sauté with the coconut oil in a large pan for 5 minutes, add in the thyme and crushed garlic cloves for 30 seconds.Throw in the sweet potato and fennel. Sauté for 5 minutes with a big pinch of salt and pepper. Throw on the kale and stock and cook for 40 minutes until the sweet potato is tender.Finely chop the chilli and serve with fresh chilli, salt and pepper.
