Healthy Christmas Recipes - Delicious Raw Christmas Pudding

Nutritionist Madeleine Shaw believes that making your own healthy versions of your favourite traditional treats is the simplest way to stay on track this Christmas and her easy Raw Christmas Cake is an all round crowd pleaser with her family and friends. 225g of Medjool dates

1 orange

170g of macadamia nuts

1 tsp of vanilla extract

2 tsp of cinnamon

1/2 tsp of ground ginger

1/2 tsp of ground cloves

1 small pinch of salt

2 tbsp of honey

2 tbsp of coconut oil


Zest the orange and add this with the rest of the ingredients into the food processor. Blitz until fully combined.

Scoop the mixture into a cake tin and place into the freezer for 1 hour, then place into the fridge until eating time.

Serve with yoghurt, berries and some cinnamon-dusted over.
