Healthy Strawberries and Cream Ice Lollies


Yes, it’s quicker to buy ice lollies from the shop but they won’t be as tasty. Make these Strawberries and Cream Ice Lollies with the kids for a fun and delicious activity!

Makes 8

5 minutes to prepare and 1 hour to set 

Ingredients

8 large Strawberries

150g of coconut yogurt

3 tbsp of maple syrup or honey

1 tbsp of lemon juice

½ tsp of vanilla extract

Directions

Finely chop the strawberries and place them in a small sauté pan, cook them on a low heat until soft with 1tbsp of water for 3 minutes.

Blend the strawberries with 1 tbsp of honey and the lemon juice until smooth, then pour into the lolly moulds and leave to the side.

Mix the yogurt with the vanilla and 2 tbsp of the honey/maple syrup until smooth, top up the rest of the lolly mould with this mixture and place in a stick. Pop in the freezer for 1 hour until set…then get stuck in!
